Melissa's Ancient Gourmet Grains


Melissa’s new line of ancient grains includes trendy grains from around the world:  Organic Farro, Organic Red Quinoa and Freekeh.


Organic Farro is a highly nutritious whole grain from the Mediterranean that was a favorite in ancient Egypt as well as the Roman Empire. It has recently regained its culinary popularity, especially in the famed Tuscany region of Italy.  The grain has a rich, nutty flavor and chewy bite. Farro is a relatively quick-cooking grain, taking only about 35 minutes of simmering to prepare. Use it in recipes calling for rice or barley. A very versatile ingredient, Farro matches well with an array of other flavors, supporting without overpowering.

Freekeh is a highly nutritious whole grain of the Mediterranean that has been a favorite in Arabian, Egyptian and North African cuisines for more than 2,000 years. The grain has a nutty, smoky flavor and crunchy texture due to its production process. Freekeh starts as green heads of wheat, picked when it is still very immature. The wheat is parched, roasted to extract the seeds, smoked and then dried again. Freekeh has four times the fiber as rice; it rates second in line for most protein against other grains and is low is carbohydrates. Use it in recipes calling for rice or barley. A very versatile ingredient, Freekeh can be served as a breakfast cereal as well as a main course pilaf.
