Healthy Meal Options - Transitioning to a Plant-Based Diet

Many people strive to be healthy. One of the most common questions I get asked is, What do you eat in a day?If you are curious about transitioning to a whole foods, plant-based diet here are some snack & meal ideas to help you get started. 

BREAKFAST


AVOCADO & TOAST


Toast has always been an easy, quick breakfast that I can (literally) eat as I walk out the door. However, loading toast with butter is high in fat and not good for your health. Luckily, mother nature provided us an awesome naturalbutter, avocado. I love avocado & toast all by itself, but sometimes I spice it up with some lemon juice & chili flakes.
  
Ingredients
   Ezekiel Bread
   Avocado
   Pepper to taste
   Juice from 1/4 a lemon (optional)

Directions
1.     Toast bread.
2.     Spread avocado on toast.
3.     Add lemon juice & pepper.

SNACK


STRAWBERRY BANANA SMOOTHIE


Who doesnt like a refreshing, strawberry banana smoothie? They are the best especially on hot summer days. Not to mention, smoothies are perfect for on-the-go situations!

Ingredients
   6 strawberries
   2 frozen bananas
   2 dates
   1 cup of almond milk

Directions
1.     Blend all ingredients in a Torrent™ blender until smooth or consistency of your liking.
2.     Enjoy!



LUNCH


BUFFALO CAULIFLOWER BITES


Ingredients:
     1/2 head of Cauliflower
     1/2 Cup of Flour (we used Garbanzo Flour to make them Gluten free!)
     1 Tablespoon of Olive Oil
     1 Cup of Frank's Red Hot Sauce
     1/2 Cup of Water

Directions:
1.      Preheat oven to 450°
2.      Chop cauliflower in to bite sized pieces
3.      Mix flour, olive oil, Frank's Red Hot Sauce, and water in a large bowl
4.      Add cauliflower.
5.      Mix well.
6.      Spread evenly on a cookie sheet
7.      Bake for 20-25 minutes or until golden brown
8.      Enjoy!


SNACK


APPLES & ALMOND BUTTER


Apples and almond butter make a great pair. I personally love to dip green apples in almond butter, but try out a few different types of apples and find out what your favorite is!

Ingredients
    1 Apple
    2 Tbsp. of Almond Butter

Directions
1.      Slice apple.
2.      Scoop almond butter.
3.      Dip apple slices in almond butter
4.      Enjoy!




DINNER 


POTATO ENCHILADAS


INGREDIENTS:
    10 Ruby Gold Potatoes
    1 yellow onion
    crushed garlic
    2 tbsp. of almond milk
    wheat OR corn tortillas (corn for gluten-free)
    your favorite salsa (I used Hatch Valley Salsa from Trader Joe's)
    jalapeño slices
    smoke paprika

DIRECTIONS:
1.      Wrap potatoes in paper towel, wet the wrapped potatoes, and throw them in the microwave for 4-5 minutes. (Alternatively, you can boil the potatoes.
2.      Sauté onions & garlic.
3.      Mash cook potatoes in a large bowl.
4.      Add cooked sautéed onions & garlic.
5.      Mix potatoes, garlic, and onion together.
6.      Scoop 2-3 tbsp. of mixture onto tortilla, and roll tortillas up and place in baking pan.
7.      Top with your favorite salsa (I used a green tomatillo salsa).
8.      Bake at 350° for 20 minutes.
9.      Enjoy!


For a more breaded texture, simply add more flour.
Try dipping them in vegan ranch dressing or other sauces.
